For 1 serving you will need:

  • ¼ can of GLOBUS sweetcorns
  • 2 eggs . 1/2 red pepper
  • 4 mushrooms
  • 1 onion
  • Olive oil for baking
  • Pinch of salt and pepper
  • A piece of hard cheese
  • Fresh parsley

Chop the onions, peppers, mushrooms and put in a frying pan with olive oil. Season the vegetables with salt and pepper. When the vegetables are fried, add sweet corn. Remove vegetables from pan to small bowl. Then in medium bowl, beat egg product, water, salt and pepper with fork or whisk until well mixed. Pour egg mixture into hot skillet. Cook 30 seconds or until bottom is set. Lift edge of eggs with heat proof spatula to allow uncooked portions to flow underneath. Continue cooking, lifting eggs as needed, 1-2 minutes or until almost set. Place cooked vegetable mixture over half of omelet; top with cheese. With spatula, fold other half of omelet over vegetables. Gently slide out of pan onto plate. Serve immediately.
